Strawberry Shortcakes

A whole lot of rose makes these perfect for Valentines

Ingredients - Serves 6

1 tub NBoC Strawberry and Black Pepper ice cream (or 3 mini tubs to make cutting the rounds easier)

Dried rose petals

For the shortbread:

115g butter

50g caster sugar, plus extra for topping

170g plain flour


  • Step 1.Preheat the over to 200 degrees
  • Step 2.Cream together the butter and sugar
  • Step 3.Mix in the flour to create a paste
  • Step 4.Move onto a work surface and gentle roll out to 1 cm thick
  • Step 5.Cut into rounds and place on a baking tray
  • Step 6.Top with a sprinkle of sugar
  • Step 7.Bake for 15 minutes or until golden
  • Step 8.Allow to cool for an hour
  • Step 9.Cut 1 inch thick rounds from the tub of NBoC Strawberry and Black Pepper ice cream
  • Step 10.Sandwich the ice cream rounds between two shortbread biscuits and roll in dried rose petals
